Ah but you forget some unforgettable, and very re-playable games from the golden age (late 90's early 2000). "Thief - Dark project" and "Thief 2-metal age" are the first games I found myself actually thinking about when not actually playing them and I still replay them once a year (get the the Gog or steam downloads and they work on win 7 and win 10). The games are just right in almost every way, the legacy versions of all the stealth games is what they are.
You're immediately plunged into the pseudo-medieval world of "the city", an outlaw from the get-go. You play with elements of oddly advanced tech combined with some magic and sorcery, and surprises aplenty, with a plot you might find yourself actually caring about. You have formidable and numerous enemies, lots of loot, ever changing maps, ingenious tools and weapons, and interesting cut-scenes along with satisfying character interactions. The story never gets in the way of game play, it is woven in perfectly and you might be amazed how much you find yourself actually caring about the story. You might be short-changing yourself if you never give them a try.
