I like your choices, bt I'd also like to add:
Deus Ex (the score is very subtle and addictive, but fits with the stealth and seriousness of the game)
Project Eden (strange sounds popping up occasionally, that startled me every time)
Undying (probably the most scary monster sounds I've ever experienced, chilling to the bone)
Oblivion (the music sets a mood of importance and royalty; sounds also add ambience to stealthy situations)
Myst (the music sets a mystical tone for the game)
Zork Nemesis (good and varying score; also very good sound effects)

Fallout 3! They really picked the perfect music to complement the game. There's something just wonderful about listening to innocent 50's tunes while a Super Mutant is trying to kill you. Or using your Sneak skill to creep up behind 2 Super Mutants who are trying to express in words how much they want to kill you when they find you, but being Super Mutants, they are finding it difficult.

For me the best game in terms of sound and music has to be Dead Space. Never before have I been so scared by the sounds alone. I even made sure I played it with a great pair of Sennhieser headphones so I could be in awe of the quality.

Shadow of the Colossus had an amazing orchestral score, which I later purchased (and enjoyed) the CD to. Quiet and empty in the abandoned kingdom, looking for the next Colossus, and flaring into an active piece first when seeing the Colossus, then again to a much more adrenaline-soaked composition when riding along the back of one.
Personally, it has my favorite soundtrack of any game. The atmosphere the music, or even lack of music, produces, is so amazing.

I understand forgetting a few legends with original music like Zelda and Mario... but Halo? Seriously? Every game in the series has music setting the tone for every minorly significant moment in the game. Great topic but do your homework next time dude. Add a list or something.
