Check out the new trailer from The Legend of Zelda: Skyward Sword. It is called the Skyloft trailer and features Link doing a lot of sidequests in the game, and a lot of other things as well. Skyloft is a place above the clouds which is disconnected with the surface, but Link has to go below the clouds to save Zelda.
There a lot of things you can do in Skyloft and you can see them in this trailer. Bird riding is one of the main things in this game.
