You can hide from cops, by hacking into their systems
If you are in the middle of an intense police chase and you have the entire Chicago PD on your tail, then the best way to escape their gaze, is to hack into their system and be totally invisible on the scanners, provided of course that the players remain still and not driving on the road, because this function will offer enough cool down time for the police to look the other way.
