Gold is much easier to come by in the new Dragon Age: The Veilguard than it was in previous Dragon Age games. However, with an abundance in opportunity comes a steep price for goods at merchants. On top of that, access to certain areas and merchants can be permanently lost based on choices and story progression.

Quest Rewards
Large chunks of XP and gold are standard rewards for completing all kinds of quests, whether mainline or side content, and is the surest way to quickly reach a target amount required. Faction quests can serve as a steady source of income as well.
Respawning World Objects
There are innumerable props scattered around the game world, ranging from vases to wagons, most of which can be destroyed for their contents to drop, if any. While this is RNG-based, it is much simpler to accomplish than grinding quests for gold.
When you come across areas packed with these objects, such as in the Market Square, or Catacombs, simply dodge into the objects to quickly destroy them and gather up the loot. The items can be sold to merchants not just for their gold value but also to gain Faction Strength to raise their Merchant Rank, which in turn unlocks access to better gear.
Once you have completed a prop-destruction run, simply leave the area, going far enough for the objects to respawn. If fast travel is an option, use it.
Exploration For Chests
Chests tend to hold larger quantities of gold than bags or pouches, but even when they do not, the other valuables and resources contained within can sell for a pretty penny at the nearest merchant.
Farming Enemies For Resources
Various enemies drop material resources of all kinds, ranging from common Flawless Crystals to legendary Fade-Touched Silk. These resources themselves can be traded in for their gold value.
